I've seen that proven quite conclusively, a game that (in a similar way to Dimitri's work) exposed as many existing variables as possible without overcomplicating the settings screens, giving enough options to cater for even the most profound cognitive and motor impairments. Those settings have proven extremely valuable to the minority that find them useful, but the default settings are hugely popular with everyone else - so much so that it is one of the most successful mainstream game they have ever produced.

As these kind of settings already exist on the back-end I totally agree with you.. a relatively minor bit of work to expose them results in a hugely beneficial experience for some people and at zero enjoyment / difficultly cost to the other players.
