Hello Peter,
there may be a way to partner with a non-profit such that a Game For Change can be created/prototyped that works to raise awareness of the issue addressed by that non-profit.

There are significant challenges to make a genuine game that is respectful of the issue.

There may be a challenge inherent in the development environment too. I have a decade-old memory of a student being unable to remove the weapon from the hand of the the player-character in the Unreal engine.

Another approach would be to have your students mentor others who are under-represented in the game development field on game development. This, too, would involve a partnership worked out in advance. This would provide a service to the field, as well as a being virtuous.

I hope you find a workable solution.
paz,
Rafael Fajardo
